This Remy Martin V.S.O.P. Cognac Recipe is "Sweet As a Peach"!
Peach Cognac Preserves
Add 2 tbsp. lemon juice to 4 c. chopped organic peaches (skins and pits removed) in a non-corrosive pot and slowly add a package of pectin. Bring the mixture to a boil on high heat and then add 5 c. of sugar. Bring to a rolling boil for one full minute. Let cool for 10 minutes. Stir Remy Martin V.S.O.P. Cognac into the peach preserves and ladle into hot jars. Seal and hot process jars in a boiling water bath for 10 minutes.
